What’s For Dinner?


So it’s been hot as balls over here this weekend, and apparently on Monday it’s going to rain and be in the 60s. Whatever, Mother Nature. I’m going to take advantage and roast vegetables! :) Then when it gets hot again it will be back to grilling and eating salads because the oven does not go on in this house when it is over 90 degrees.

Here’s what else we are chowing on:

Lunch: Citrus Carnitas Salad with Blackberry + Roasted Pepper Vinaigrette
Dinner: Blue Cheese Bison Burgers (I use this as the base)+ Roasted Broccoli + Sweet Potato Fries

Lunch: Greek Salads with Lemon Oregano Vinaigrette
Dinner: Southwest Turkey Sliders with Spicy Avocado Slaw and Sauteed Squash

Lunch: Cobb Salads with Blue Cheese Vinaigrette
Dinner: Grilled Shrimp (something spicy) + Grilled asparagus and salad

Lunch: Taco Salad
Dinner: Indian Spiced Turkey Curry over Sauteed Greens

Lunch: Chipotle for lunch!
Dinner: Cajun Bison Sausages with Peppers + Onions and Salad

Lunch: Brunch!
Dinner: WILD CARD — Leftovers//Mustgo//Go Out//Figure it out on the fly

    Wait… Is blue cheese paleo? Because I could totally be down with the diet if that was allowed. The no cheese thing keeps stopping me from attempting.

      Ha! It’s a complicated answer. Is it strict paleo? No. But high quality dairy does have a place under the “ancestral eating” umbrella. You see it in “primal” circles more than paleo. Short answer: we eat dairy. I don’t consider it a quality protein source, but I haven’t eliminated it either. For what it’s worth.

        Oh good to know! I have high hopes of trying Paleo after this kid is born and I’m not working for a while. I figure it will at least get me out of the house to the grocery store :)

    Too funny, I just bought all the ingredients for the Turkey sliders with avocado slaw from PaleOMG :) It looks amazing! (If you haven’t yet, try her Chicken w/Dates, Shallots, & Rosemary…omg!)

    I’m finally going to try Mel’s carnitas this Friday!

    My folks are visiting, and since they’re not Paleo (and I’ve recently fallen off the Primal/Paleo wagon…), we’ll be having them on flour tortillas. But I have high hopes for deliciousness!

    Belated update: Carnitas were totally worth it! That sh*t is even good cold, straight out of the fridge! Definitely on our “make again” list. :)
