What’s For Dinner?

Well I finally took a minute from my busy couch babysitting schedule to come up with some meals. But since I have friends coming into town this weekend, I’m only cooking for half of the week — the other half we’re playing by ear.

Monday
Lunch: Carnitas Salads (mmm, leftover carnitas!)
Dinner: Asian Beef + Cauli Rice Bowls

Tuesday
Lunch: Grilled Sausages + Broccoli + Salad
Dinner: TBD Burgers + Sweet Potato Fries + Salad

Wednesday
Lunch: Grilled Chicken Thighs + Green Beans
Dinner: Green Curry Chicken + Vegetables + Salad

Thursday
Lunch: Spinach Salads with Bacon and Eggs
Dinner: Grilled Rib Eyes + Asparagus + Salad

Girls Weekend!

Friday
Today will probably involve some lunch at the Beacon Bar & Grill and definitely some Rum Runners. Maybe after an Emerald Bay Hike and some fun shopping? My favorite Lake Tahoe trip!

Saturday

Sonoma Trip! You KNOW this means there will be a meal at the Sonoma Cheese Factory and some lunch on the plaza. Duh.

Sat night, we will go somewhere fun!

Sunday

Brunch at Tower Cafe, for sure.

Then, I’m sure there will be more couch babysitting. It seems to be The Thing lately. 🙂

    Sounds like you have a fun weekend planned!

    We’re startin Balanced Bites’ 21 day sugar detox today, so that should be scary/fun/interesting…

    Here’s our dinners:

    M: rotisserie chicken + fried green tomatoes (frost is coming ’round these parts… and then it’s supposed to be in the 70s this week, go figure.)

    T: roasted red pepper spaghetti squash + chicken, garlic brussels sprouts (I’m going to attempt to convert the brussels-hater in my house!)

    W: bacon-wrapped paleo meatloaf + turnip mash + roasted broccoli

    Th: the smoky pot roast you guys had last week (how did that turn out, btw?), green beans

    F: chicken chili

    weekend: camping!

    I’m winging it this week! I only know we are having cheeseburger lettuce wraps, squash fries, and steamed broccoli tonight! The rest of the week is up for suggestion…

    I made kale & lentil soup, mushroom soup (no cream), pot roast, and roasted broccoli. Tomorrow night I’m making halibut. Mmm!

    Tomorrow lunch: Work pot luck! I’m bringing garlic cheese bread and caprese salad (Elizabeth’s tomatoes to the rescue!) Word is there will be quiche (umm, like I need more meals encased in pastry, but whatevs), a burrito bars and Oktoberfest-like desserts. Which means pumpkin, I guess? Which means ick.

    Tomorrow dinner: Parchment tilapia, although Chris bought leeks, rather than fennel, so part of me wants potato leek soup and…fish, I guess.

    Wednesday lunch: Leftovers? Who knows.

    Wednesday dinner: Steak, corn, and black bean chili.

    Thursday lunch: Leftover chili, probs.

    Thursday dinner: Something with chicken? I’m open to suggestions!

    Friday: We’ll be in Bakersfield as you well know. BOO.
