While you are reading this post, I will be eating this plate of delicious eggs benedict. Well, not this exact one, but the one my mom is making me. And you can bet it will be good. But you aren’t here to find out what I’m eating right now, are you? How about I get on to what I’m eating next week!

Monday
Lunch: Taco Salad (duh.)
Dinner: Broccoli Slaw Frittata with Ham + Sweet Potato Hash

Tuesday
Lunch: Asian Ground Beef, Mushrooms + Broccoli Slaw Wraps
Dinner: Cayenne Rubbed Chicken with Avocado Salsa + Chili Zucchini

Wednesday
Lunch: Grilled Chicken Salad
Dinner: Turkey Satay Burgers + Sweet Potato Fries + Salad

Thursday
Lunch: Paleo-ified Chinese Spring Roll Salad with Grilled Chicken
Dinner: Balsamic Chicken + Peppers and Roasted Artichoke Salad

Friday
Lunch: Salmon Burgers and Roasted Yellow Squash Fries
Dinner: Leftovers or Go Out!

Saturday
Lunch: Brunch
Dinner: Grilled Marinated Flank Steak + Roasted Cauliflower with Jalapeno Cilantro Salsa Verde

Sunday

    Jimmy wants to thank you for posting the link to the Asian Ground Beef, Mushroom & Broccoli Slaw Wraps, as it saved him (/us) last night from eating scrambled eggs for dinner (again). Also, the addition of sliced mango to said wraps may have just changed our lives.

    Oh I’m glad to hear it’s good! It’s a new one for us (and I don’t really love mushrooms BUT I’M TRYYYYYYYYYYYING, WAH!) so I wasn’t sure. And plus mango? Sounds AMAZING! I had a fruit salad with mango in it this weekend and all of a sudden I want it in everything!

      Agree, those wraps are delicious! We’ve made them 3-4 times and they are excellent. Do not skip the sriracha sauce, it takes them to a whole new level. The mushrooms cook down so much that they don’t overpower the dish as much as you might expect, but definitely do cook off all of the liquid to keep the mess down. Yummy stuff!

        Oh good, that’s what I hoped. Sometimes I can throw mushrooms in things and not even taste them, and other times it completely RUINS it for me. And Garrett would take a bath in Sriracha if it was socially acceptable, so I definitely won’t leave that out. Thanks for the heads up!

    FRI: Hungarian Pot-Roast with Sour-Cream Paprika Gravy (slow cooker)

    Um. Well. This will be its maiden voyage. I got it for Christmas (because kitchen gadgets are really easy gift ideas for my family), but then two weeks later my kitchen somehow disappeared (!), so it more or less went into storage. Then I got my kitchen back, but now we have an induction cooktop, and I wasn’t sure it would work (basically, the pan will work if a magnet sticks to it). I finally dragged it out today and tested it, and SUCCESS! So now I guess I need to read the instruction manual tomorrow on my day off. Will report back. 😉

  5. Well, the week’s half over, but I’m only just getting to mah blawgz!

    Monday night was salmon and a big salad with blue cheese and ranch dressing (the Bolthouse yogurt brand which I think I meant to tell you…IS FROM BAKERSFIELD!)

    Last night was, as you know, your crockpot pork lettuce wraps, but with chicken thighs (delish.)

    Tonight is leftover-from-Easter flank steak and roasted peppers and maybe a tortilla or three. Also leftover guac.

    Tomorrow I’m thinking I’ll finally make my fauxlafels, since I bought Greek yogurt for tzatziki, oh, two week ago now…

    No plans for Friday…perhaps a pizza!

    And as for Saturday, we’re at the beginning of the end on the kitchen redo, so we’ll probably eat out or order in, depending on how we feel.
