What’s For Dinner?

So…can I get a HELL YEAH for January? New year. New month. New week. New menu.

Man, to look at the upcoming week and not see a social event where I will be imbibing and indulging makes me blissfully happy.

I know I mentioned it before but this cookbook just has so many quick and easy tips for how to eat healthy all week long. I’m super tired today (that’s what happens when you get old and “staying up until midnight” becomes An Event!) so I basically just opened the book and made a list. With relatively little effort I had an AWESOME looking menu that I’m excited about. It’s a keeper, that book. And no one is urging me to say that. All zeal is from my own dorky heart, you guys!

I have the day off tomorrow so there will be a fierce Cooking WOD happening! Today though, I’m taking it easy.

Lunch: Grilled Chicken Salad (mmmmm, salad!)
Dinner: Lamb Stew with Tomatoes and Bacon (This is actually from the Jan/Feb issue of EveryDay with Rachael Ray)

Lunch: Ground Beef + Cabbage Hot Plate (This is one of the most useful concepts in Melissa’s book. It’s the difference between “cooking dinner” and “making dinner”)
Dinner: Brined Grilled Chicken + Sauteed Spicy Chili Squash + Salad (yep, still looking forward to salad)

Lunch: Ground Beef Fajitas + Kale Chips
Dinner: Asian Kielbasa Steamer with Carrots + Broccoli + Cauliflower

Lunch: Thai Grilled Chicken Salad
Dinner: Chicken Stir Fry + Cauliflower Fried Rice (Bok Choy, HOLLA!)

Lunch: Ground Pork Hot Plate with Apples and Cabbage
Dinner: Chocolate Chili — this recipe is in the free 30 Page Download of the cookbook. TRY IT! YUMM-O-LICIOUS

Lunch: Leftover Chocolate Chili (fingers crossed there will be any)
Dinner: Paleo Shepherd’s Pie
