What’s For Dinner?

I’m aiming for another week of 5 workouts, which means lunches need to prep me for a good butt-whooping and dinners need to come together relatively quick.

Last week I kicked ass and took names at the gym and had the cleanest week of eating I’d had in quite a while. It felt notably better, so I’m going to try for a repeat this week.

Here’s what we’re eating:

Monday

Lunch: Grilled Southwest Chicken Thighs + Summer Squash with Blue Cheese Butter

Dinner: Cobb Salad with Rotisserie Chicken (Hooray for Costco!)

Tuesday

Lunch: Ground Turkey Zucchini Boats + Salad w/ almonds + cranberries

Dinner: Paleo Fried Chicken + Garlic Cauliflower Mash + Broccoli

Wednesday

Lunch: Green Curry Chicken + Broccoli Slaw

Dinner: Peppered Grilled Flank Steak with Tomatoes, Avocados + Onion Jam with Grilled Salad

Thursday

Lunch: Chicken Chorizo + Peppers and Onions with Salad

Dinner: Grilled Cajun Shrimp with Remoulade + Spinach Salad

Friday

Lunch: Greek Salad with Ground Gyro Beef (it was so good last week it’s making another appearance!)

Dinner: BLTA Burgers with Baked Zucchini Fries + Salad

Saturday

Lunch: Brunch!

Dinner: Asian Pork Lettuce Wraps + Cucumber and Tomato Salad

Sunday

Shop!

I’m thinking I’m going to brave cooking lamb next week — maybe for Sunday dinner. Are you cooking anything next week that’s new to you?

    Yes! I just got a new Barefoot Contessa cookbook (“That’s So Easy!”) — I *loved* her back to basics because most of the entrees and veggie dishes can either are, or can be easily adapted to be, paleo friendly, and SO SO SO good. (seriously, almost every dish I make out of that book has me going “OMG SO GOOD” when I eat it)

    ANYWAY – I just got her new one and I currently have a rack of lamb marinating in a red wine/lemon juice/olive oil/rosemary/garlic marinade, and have a mint/greek yogurt sauce sitting in the fridge. A leeetle bit of an annoying meal b/c you have to make the whole thing the day before (I HATE WAIT) but it’ll be super awesome tonight to roll home and just have to throw the lamb on the grill, stir up the yogurt sauce and present. WOO!

    Oooh, tell me how it is! I seriously NEED to brave lamb. I only order it when we go out and that is sad!

    We did the slow cooker lamb shanks (I think I linked to the recipe last week?) and it was DELISH… even after my hubs told me he doesn’t like things from the crockpot because he doesn’t like “soggy food?” (Really?! Where did that come from?) I think it made him change his mind back to reality.

    This week, here’s ours:

    M: leftovers [I’m working at 15 hour day. yippee! :-/ ]
    T: Chicken Tikka Masala, roasted zucchini/squash
    W: Cedar-Plank Salmon, Warm Corn Chowder Salad (I know corn isn’t primal, but I.CAN’T.STOP. send help.)
    Th: Pork Chops with Mustard-Herb Sauce, whatever veg is teetering on the edge of slimer-land (or garlic roasted broccoli!)
    F: no ideas yet. eep. perhaps I’ll peruse your links. 🙂

      I can’t send help on the corn since I also love it. I don’t eat it often but when I do…GET OUT OF THE WAY. Can’t stop.
